Lentil Potato Soup 

Spring and warmer temperatures are approaching but the cold days brought by late winter, still remain. This Lentil Potato Soup recipe is hearty and healthy, making it the perfect option to add to your meal prep routine. Lentils are rich in fibre, folate and potassium making them a great choice for the heart and for managing blood pressure and cholesterol. Never made homemade soup before? This recipe is the perfect place to start. 

Lentil Potato Soup

Ingredients

  • 2 tbsp EVOL
  • 3 cloves minced garlic
  • 1/4 cup diced onion
  • 1 large diced carrot
  • 1/4 cup tomato sauce
  • 2 tbsp tomato paste
  • 1 1/4 cup lentils
  • 12 oz bite size potatoes
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • 4-5 cups water

Directions

  1. Heat oil, add onion and cook for one minute, add garlic and carrots, cook 2-3 minutes.
  2. Add in tomato paste, sauce, and lentils, cook for one minute.
  3. Add potatoes, water and seasoning.
  4. Cover and bring to boil. 
  5. Reduce heat to medium low and simmer 30 minutes until lentils are cooked and potatoes tender.
  6. Taste and adjust salt and pepper if needed.

Enjoy this soup alongside the P2 Honey Crisp Apple Kale Salad for a balanced meal, or on its own for a comfort food moment!
